Ready-To-Use Food

Brazil nut stir fry (as always, remember to check for any nut - or other - allergies!)

Ingredients

A little olive oil

2 garlic cloves, finely chopped

2 onions, finely chopped

4 carrots, cut into matchsticks

3 peppers, thinly sliced

300g peas

Roughly 3cm piece of fresh ginger, peeled and finely chopped or grated

Soy sauce

Juice of two limes

Noodles, cooked as per packet instructions

200g chopped Brazil nuts

Freshly chopper coriander

Method

• Heat the olive oil in a large frying pan or wok

• Add the onions and garlic, cook for 5 mins or until starting to soften

• Add the carrots, peppers and peas and continue to stir for another 5 mins

• Add the fresh ginger and stir, followed by a good glug of soy sauce and the juice of one of the limes along with some black pepper.

• Cook the noodles (if they need pre-boiling.)

• Add noodles to your veg, cover with the remaining lime juice and add the Brazil nuts.

• Sprinkle with fresh coriander and extra soy sauce to taste.
